Ingredients
2 Cornish game hens
3 tbsp garlic
1 tbsp thyme
1/3 cup grape seed oil
salt and pepper
Directions
Trim the hens, disjointing the wings and removing the tail.
Using your finger, separate the skin from the breast.
Mix grape seed oil, salt, pepper, garlic, and thyme in a small bowl until it forms a paste.
Scoop the paste under the hen’s skin and in the chest cavity. Spread remaining paste around outside of hen.
Place hens in a baking pan, breast side down, and cook at 400 degrees for 35 minutes.
Flip hens over in the pan, so that they are breast side up, and cook for 15 minutes or until internal temperature reaches 165 degrees.
Remove hens from oven and let them sit for 5 minutes.
Slice each hen in half .
Remove the spine by slicing it and creating two even halves.
Ready to serve!
Many butchers carry fresh game hens, especially at this time of year, so go out of your way to find some. If you must use frozen, or packaged game hens, make sure that any additives use to treat them do not include gluten.
